The markets have a strong following across NSW and are regularly held at places such as Wagga Wagga, Orange, Coffs Harbour and Dubbo.
Morisset Showground will host the markets from 11am to 8pm.
The event will feature live music, retail stalls, and amusement rides for children, but the food on offer won't be your usual carnival fare.
"It's restaurant-quality food from some of the best food trucks in the business," markets manager Anna Demasi said.
Expect stalls offering everything from gourmet gozlemes and hamburgers to Mexican, Asian and contemporary Australian food.
"For instance, there's a smoke house vendor who does a barramundi burger," Ms Demasi said.
"There's a truck that makes amazing street-style Thai tacos.
"And the Bao Brothers do spring rolls, but they're definitely not your usual spring rolls."
Dessert offerings include waffle stacks, Nutella pizzas and Roll 'em Up Ice-Creams.
Beer and wine will also be available.
Many of the vendors who prepare food for the markets across rural and regional NSW will make the trip to Morisset, and will be joined by Newcastle-district food trucks.
"The markets are always a fun, relaxed day out for families, and everyone, really," Ms Demasi said.
"People just enjoy having a nice laid-back Sunday at the markets and having great food with a beer or a wine."
A spokesperson for Lake Macquarie City Council, which now manages the showground, said it would be a big night for the district.
"This is the first time these pop-up markets have been run in the Morisset area and it's a great opportunity for Lake Macquarie residents to attend," the spokesperson said.
"Pop-up market events such as the Foodies Night Market at Morisset help contribute to a vibrant night-time economy. Attracting a variety of new night-time events and activities for residents to enjoy enhances Lake Macquarie City's reputation as an attractive and healthy place to work, live and invest in."
The Foodies Night Markets wouldn't be the only new show in town, the council said.
"The Morisset Showground Operating Committee will continue to encourage new events and opportunities for residents of Morisset and the wider Lake Macquarie community to revel in. Stay tuned to the Morisset Showground Facebook page for announcements of future events," the spokesperson said.
There will be free parking at the showground on Sunday.
