Police allege the ice-cream truck was stolen from Hunter Street, Newcastle, and was spotted driving south on the Pacific Highway in Belmont South about 9.20am.
A pursuit was initiated and road spikes were deployed on the Pacific Highway in Catherine Hill Bay and again at Doyalson, shredding the front tyres of the truck.
The truck allegedly continued until it finally stopped on Lenola Crescent, Blue Haven, and the driver ran from the vehicle.
The man, aged 45, was arrested a short distance away and taken to Wyong police station.
He was charged with unlicensed for class, destroy damage property, police pursuit (Skye's law), and take and drive conveyance without consent of owner.
