About 10.45am, the man entered the service station on the Pacific Highway.
Police were told the man threatened a female attendant, demanding money.
He fled the scene a short time later with cash.
No one was injured.
Officers attached to Tuggerah Lakes Local Area Command are appealing for information about the incident.
They are seeking a caucasian man, about 40 to 50 years old, 170cm tall, of medium build and with grey chin stubble.
He was wearing a white polo shirt, royal blue shorts, running shoes with pink laces, a dark brown beanie and dark sunglasses.
