Researchers from the Hunter Medical Research Institute (HMRI) want to see if the capsules offer the same benefits as fresh fruit and vegetables.
They are investigating whether the capsule can reduce inflammation produced by fat cells and thereby lower the risk of heart disease, diabetes, asthma and cancers in overweight people.
Overweight adults aged 40 or older are invited to participate.
The capsules contain extracts from carrots, broccoli, spinach, apples, oranges, pineapples and berries.
Participants take capsules daily for eight weeks and have two clinic visits.
"When you're overweight, fat tissue not only makes you feel uncomfortable it also produces chemicals that circulate in the bloodstream and greatly increase the risk of chronic diseases," Associate Professor Lisa Wood of Newcastle University said.
